This is breakfast with a backbone. Built for early starts and long days, made with smoky, protein-packed jerky. Crispy potatoes, peppers, and onions lay the groundwork, while chopped beef jerky brings bold flavor and grit to every bite.

Ingredients:

  • 1 package Peppered Original Beef Jerky, finely chopped
  • 2 cups Yukon gold or red potatoes, diced small
  • 4 eggs
  • 3/4 cup sharp cheddar cheese, shredded
  • 2 tbsp olive oil or butter
  • ½ yellow onion, diced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp chili powder
  • Salt and cracked black pepper, to taste

Directions:

Heat a large skillet over medium-high heat. Add olive oil or butter, then toss in the diced potatoes. Season with salt and pepper. Cook 10–12 minutes, stirring occasionally, until golden and crispy.

Add onion and bell pepper to the skillet. Cook 3–4 minutes until softened. Stir in chopped Stetson Perky Jerky Beef Jerky along with smoked paprika, garlic powder, onion powder, and chili powder. Cook 2–3 minutes until the jerky softens slightly and releases that smoky, beefy flavor.

Create small wells in the hash and crack an egg into each. Cover the skillet and cook until whites are set but yolks are still runny, about 3–5 minutes. Add cheese to each egg and cover to melt. Serve warm and enjoy the best in the West.
