Ingredients:
- 1oz More Than Just Original Beef Jerky, finely chopped
- 3 cups mashed potatoes (leftover or freshly made)
- ½ cup shredded cheddar cheese
- 2 green onions, finely chopped (optional)
- 1 egg, lightly beaten
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
For Breading:
- 1 cup flour
- 2 eggs, beaten

Directions:
Preheat oven to 400°F. In a large bowl, combine mashed potatoes, chopped Perky Jerky, cheese, green onions, garlic powder, salt, pepper, and 1 beaten egg. Mix until everything is evenly incorporated and smooth.
Scoop about 2 tablespoons of mixture at a time. Roll into small ovals or balls (about golf-ball size). Place on a baking sheet and chill for 10–15 minutes to help them firm up. Set up a breading station: bowl 1: flour, bowl 2: beaten eggs, bowl 3: breadcrumbs. Dip each chilled croquette in flour, then egg wash and breadcrumbs (make sure they're fully coated).
Place croquettes on a greased or parchment-lined sheet. Lightly spray tops with cooking spray. Bake 15–20 minutes, turning halfway, until golden.
