Comfort food just got more exciting. Layered with gooey cheese, seasoned chicken, and our turkey jerky for a punch of heat you didn’t see coming. Perfect for feeding a crowd, meal-prepping for the week, or showing off at your next potluck.
Ingredients:
- 2.2oz bag of Hot & Bothered Turkey Jerky (finely chopped)
- 1lb chicken breast
- 1 medium green pepper (diced)
- 1 medium red pepper (diced)
- 1 15oz can black beans, rinsed and drained
- 1 cup frozen corn
- 1 cup plain greek yogurt
- 1 cup shredded cheese
- 1 packet taco seasoning
- 1 cup tortilla chips (crushed and packed)
- 3/4 cup salsa (preferred)
Garnish:
- Shredded lettuce
- 1 roma tomato (diced)
- Greek yogurt or sour cream
Directions:
Preheat oven to 375 degrees. In a medium pot, bring water to a boil. Cut chicken breasts in half (length wise) and add to water. Cook for about 10 minutes until tender and not pink in the center. Remove chicken from the pot and shred to preferred consistency.
Combine chicken and taco seasoning together in a greased 9x13 baking dish. Add peppers, beans, corn, greek yogurt, and salsa to the chicken and mix well. Cover with aluminum foil and bake for 30 minutes.
Remove from oven and load with chopped Hot & Bothered Turkey Jerky and shredded cheese. Bake until cheese is melted (about 5 minutes). Sprinkle crushed tortilla chips on top. Serve with lettuce, tomatoes, greek yogurt, and other toppings if desired.
