Veggie Wrap

Ingredients:

  • 1 package Perky Jerky Salt & Pepper Vegan Jerky, chopped or torn
  • Large flat wrap (preferred/spinach herb shown)
  • 1 carrot, peeled and thinly sliced
  • 1 English cucumber, peeled and thinly sliced
  • 1 red pepper, thinly sliced
  • 1 Roma tomato, thinly sliced
  • 1/2 cup kale, chopped
  • 1/4 cup vegan feta cheese
  • Extra virgin olive oil, as needed
  • Salt & pepper to taste

Directions: 

Place a generous spread of sun dried tomato hummus in the center of wrap. Arrange vegetables and vegan jerky, beginning with kale over hummus. Sprinkle with feta, drizzle with olive oil and season with salt and pepper. Fold bottom half over ingredients, then sides and roll toward top of the wrap.

Sun Dried Tomato Hummus

Ingredients:

  • 2 16oz cans garbanzo beans
  • 1/2 cup tahini
  • 1/2 8.5oz jar sun dried tomatoes in oil
  • 5 cloves garlic
  • 1 lemon, juiced
  • Extra virgin olive oil, as needed
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt & pepper to taste

Directions:

Combine garbanzo beans (undrained), tahini, sun dried tomatoes (with oil), garlic, lemon juice, cumin, paprika in bowl of a food processor or blender, pulse to coarsely combine. Add ¼ cup olive oil, process and continue to drizzle oil until desired consistency is reached. Season with salt & pepper, top with additional olive oil for serving.
