Spring calls for something fresh. This Spring Harvest Turkey Jerky Salad is crisp, colorful, and satisfying. With fresh greens, roasted sweet potatoes, crunchy walnuts, and savory turkey jerky in every bite. This recipe has serious flavor and protein all in one bite!

Ingredients:

Greens/Protein

  • 1 package More Than Just Original Turkey Jerky, shredded
  • 4 cups baby arugula
  • 2 cups baby spinach
  • 1 cup roasted sweet potatoes, cubed
  • 1/2 cup radishes, thinly sliced
  • 1/3 cup dried cranberries
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup walnuts

Dressing

  • 3 tbsp olive oil
  • 1 tbsp dijon mustard
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • Salt and cracked black pepper, to taste

Directions:

Cook the sweet potatoes with olive oil, salt, and pepper over medium heat until soft. In a large bowl, combine arugula and spinach. Layer with turkey jerky, roasted sweet potatoes, radishes, cucumber, cranberries, goat cheese, and walnuts. Drizzle dressing just before serving and gently toss.
